Indonesian Stink Beans (or substitute) 1 pod
Coconut Milk (Kara) 1 package
Green Tomatoes 3 pieces
Galangal (Laos) to taste

Sugar to taste
Seasoning to taste

Instructions

  1. Preparation of the Fish: Begin by rinsing the pindang tongkol thoroughly. Remove the head and bones, then fry the fish in oil until it is cooked through and slightly crispy. Set aside.

  2. Prepare the Aromatics: Slice the shallots, garlic, red chilies, and green chilies into small pieces.

  3. Sauté the Aromatics: In the same oil used for frying the fish, add the sliced shallots and garlic. Sauté until fragrant and golden brown. Don’t forget to crush the galangal and add it to the mix for an aromatic kick.

  4. Incorporate the Tofu: Next, add the cooked tofu cut into small cubes. Stir gently to allow the tofu to absorb the flavors of the aromatics.

  5. Add the Fried Fish: Carefully introduce the fried pindang tongkol back into the pan. Pour in enough water to cover the mixture and allow the spices to infuse into the fish and tofu.

  6. Coconut Milk and Eggs: Pour in the coconut milk and add the peeled hard-boiled eggs. This will enhance the creaminess of the dish.

  7. Season the Dish: Season with salt, sugar, and any additional seasoning as per your taste preferences. Stir well and let it simmer for a few minutes until everything is well combined and heated through.

  8. Finishing Touches: Allow the dish to cook until the coconut milk thickens slightly. Adjust the seasoning if necessary.

  9. Serve and Enjoy: Once the flavors have melded together, serve the dish warm. The combination of tender tofu, flavorful fish, and rich coconut milk creates a comforting meal that is sure to impress.

This recipe highlights the unique taste of Indonesian cuisine and the way flavors can come together to create a heartwarming dish. Give it a try and savor the delightful blend of ingredients that make kotokan tahu, pindang tongkol, and eggs a standout meal!
