Garang Asem Ayam Recipe

Ingredients:

  • 250 grams chicken (ΒΌ kg)

Spice Paste:

  • 8 shallots
  • 3 cloves garlic
  • 1 lime leaf (remove the central rib)
  • A pinch each of ginger, kencur (aromatic ginger), galangal, turmeric, and coriander
  • Salt, sugar, and bouillon powder to taste

Additional Ingredients:

  • 3 tomatoes, sliced (alternatively, use belimbing wuluh if available)
  • 3 stalks chives, sliced
  • 10 bird’s eye chilies, whole
  • 250 ml coconut milk (use Β½ a can of Kara coconut milk mixed with water)
  • 1 stalk lemongrass, bruised
  • 1 lime leaf
  • 2 kaffir lime leaves

For Wrapping:

  • Banana leaves (optional)
  • Toothpicks or skewers

Instructions:

  1. Prepare the Ingredients:

    • Clean and cut the chicken into small pieces. Place it in a bowl.
    • Mix the chicken with the spice paste, ensuring the chicken is well-coated.
  2. Mix Additional Ingredients:

    • Combine the tomatoes, chives, and bird’s eye chilies with the chicken. (Note: Traditionally, these are mixed in a pan, but for convenience, you can mix them directly in the bowl.)
  3. Cooking:

    • Heat a sufficient amount of oil in a pan over medium heat. Fry the seasoned chicken until it releases its aroma.
    • Gradually add the coconut milk, stirring continuously to prevent curdling. Reduce the heat to low to medium to ensure the coconut milk does not separate. Cook until the chicken is fully cooked and the flavors meld together. Taste and adjust seasoning if necessary.
  4. Wrapping:

    • If using banana leaves, lightly wilt them by placing them over a pot of steaming water or directly over the flame to make them more pliable.
    • Transfer the cooked chicken into a heatproof dish, wrap it in banana leaves, and secure with toothpicks or skewers.
  5. Steaming:

    • Steam the wrapped chicken for 15-25 minutes. Since the chicken is already cooked, this step is just to allow the flavors to meld and to give the banana leaves a chance to infuse their aroma.
  6. Serving:

    • Once done, unwrap the chicken and serve hot. Enjoy the tangy, savory, and spicy flavors of this delicious dish!
