Ingredients:

  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/2 tablespoon cornstarch
  • 1 celery stalk, sliced
  • 1 onion, sliced
  • 1/2 green bell pepper, cut into strips
  • 1/2 cup sliced water chestnuts
  • 1 tablespoon soy sauce
  • 1/4 cup sliced almonds
  • 1 tablespoon vegetable oil

Instructions:

  1. Prepare Chicken:

    • In a bowl, combine the chicken pieces with salt and cornstarch, ensuring the chicken is evenly coated.
  2. Stir-Fry Chicken:

    • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for about 2 minutes, or until the chicken turns white and is cooked through.
  3. Add Vegetables:

    • Add the celery and onion to the skillet. Continue to cook, stirring frequently, for about 2 minutes until the vegetables begin to soften.
  4. Incorporate Remaining Ingredients:

    • Stir in the green bell pepper, water chestnuts, mushrooms (with their liquid), and soy sauce. Cook for an additional 4 minutes, or until the vegetables are tender and the flavors have melded together.
  5. Finish and Serve:

    • Stir in the sliced almonds. Remove from heat and serve immediately over cooked rice.
