  • Calories per Serving: 841.4

Ingredients:

  • 2 lbs boneless leg of lamb
  • 1/2 cup olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 1 bay leaf
  • 1/8 tsp salt
  • 1/8 tsp dried oregano
  • 1/8 tsp dried rosemary leaves
  • 1/8 tsp ground black pepper
  • 2 onions, cut into chunks
  • 2 green bell peppers, cut into chunks
  • 12 mushrooms
  • 2 tomatoes, cut into chunks

Instructions:

  1. Marinating the Lamb:

    • Place the lamb in a large container with a cover.
    • In a medium bowl, combine olive oil, lemon juice, minced garlic, white wine, bay leaf, salt, pepper, oregano, and rosemary to prepare the marinade.
    • Pour the marinade over the lamb cubes, ensuring they are thoroughly coated.
    • Cover the container and refrigerate for at least 24 hours, stirring occasionally to infuse the flavors evenly.
  2. Preparation:

    • Approximately 1 hour before serving, preheat the broiler.
    • Drain the lamb kebabs, reserving the marinade for later use.
    • Thread separate skewers with lamb, onions, green peppers, and mushrooms, placing them on a broiling tray.
    • Baste the vegetables with some of the reserved marinade.
  3. Broiling:

    • Broil the skewers about 4 inches from the heat source, ensuring to turn them frequently for even cooking:
      • Green peppers: about 7 minutes
      • Onions: about 12 minutes
      • Mushrooms: about 3 minutes
    • Remove the skewers and allow them to cool slightly until they can be handled.
  4. Re-Thread Skewers:

    • Leave the broiler on.
    • Remove the skewers from the ingredients and rethread 4 or 8 skewers (depending on size) with alternating pieces of lamb, onion, green pepper, mushrooms, and tomato.
    • Baste the skewers again with any remaining marinade.
  5. Final Broiling:

    • Return the skewers to the broiler, turning them frequently.
    • Broil until the meat is reheated and cooked to medium-rare perfection, the vegetables are slightly charred in spots, and the tomatoes are tender but not falling off the skewers (approximately 5 to 7 minutes more).
  6. Serving:

    • Serve your aromatic Armenian Shish Kebabs with fluffy Rice Pilaf and warm Pita Bread for a complete and satisfying meal.
