Tomoko and I whipped up this delightful cold soba noodle, chicken, and prawn salad for our dinner tonight, inspired by a recipe I recently shared. Keep in mind that the prep time mentioned here excludes the cooking and cooling time for the chicken (I opted for poaching). It’s a perfect dish for those warm summer evenings or as a savory addition to your brunch spread.
Ingredients:
- 1 chicken thigh fillets
- 4 prawns
- 300g soba noodles
- 1 red capsicum
- 1/2 cup bean sprouts
- 2 green onions
- 2 tbsp fresh coriander, chopped
- 2 tbsp fresh mint leaves
- 2 tbsp roasted peanuts
- 1/4 cup fresh coriander leaves
- 1 lime
- Soy sauce, to taste
- Fish sauce, to taste
- Lime juice, from 1 lime
- Garlic, minced
- Gingerroot, grated
Dressing:
- Lime juice, from 1 lime
- Soy sauce, to taste
- Fish sauce, to taste
- Garlic, minced
- Gingerroot, grated
Instructions:
Step | Description |

1 | Cook the soba noodles according to the directions on the packet. |
2 | Drain the noodles and rinse under cold water to cool them down. Ensure thorough draining. |
3 | In a large bowl, combine the cooked and cooled soba noodles, poached chicken, and prawns, bean sprouts, sliced red capsicum, chopped green onions, mint leaves, and chopped coriander. |
4 | Toss the ingredients well to distribute them evenly. |
5 | Prepare the dressing by mixing lime juice, soy sauce, fish sauce, minced garlic, and grated gingerroot in a small bowl. Adjust the seasoning to your taste preferences. |
6 | Pour the dressing over the salad and toss again until everything is well coated. |
7 | Divide the salad into 4 serving bowls. |
8 | Garnish each serving with fresh coriander leaves, roasted peanuts, and a lime wedge on the side. |
