Description:

Tomoko and I whipped up this delightful cold soba noodle, chicken, and prawn salad for our dinner tonight, inspired by a recipe I recently shared. Keep in mind that the prep time mentioned here excludes the cooking and cooling time for the chicken (I opted for poaching). It’s a perfect dish for those warm summer evenings or as a savory addition to your brunch spread.

Ingredients:

  • 1 chicken thigh fillets
  • 4 prawns
  • 300g soba noodles
  • 1 red capsicum
  • 1/2 cup bean sprouts
  • 2 green onions
  • 2 tbsp fresh coriander, chopped
  • 2 tbsp fresh mint leaves
  • 2 tbsp roasted peanuts
  • 1/4 cup fresh coriander leaves
  • 1 lime
  • Soy sauce, to taste
  • Fish sauce, to taste
  • Lime juice, from 1 lime
  • Garlic, minced
  • Gingerroot, grated

Dressing:

  • Lime juice, from 1 lime
  • Soy sauce, to taste
  • Fish sauce, to taste
  • Garlic, minced
  • Gingerroot, grated

Instructions:

Step Description
1 Cook the soba noodles according to the directions on the packet.
2 Drain the noodles and rinse under cold water to cool them down. Ensure thorough draining.
3 In a large bowl, combine the cooked and cooled soba noodles, poached chicken, and prawns, bean sprouts, sliced red capsicum, chopped green onions, mint leaves, and chopped coriander.
4 Toss the ingredients well to distribute them evenly.
5 Prepare the dressing by mixing lime juice, soy sauce, fish sauce, minced garlic, and grated gingerroot in a small bowl. Adjust the seasoning to your taste preferences.
6 Pour the dressing over the salad and toss again until everything is well coated.
7 Divide the salad into 4 serving bowls.
8 Garnish each serving with fresh coriander leaves, roasted peanuts, and a lime wedge on the side.
9 Serve immediately and enjoy the refreshing flavors!
