To prepare the delightful Awadhi Moong Dal Ki Goli, begin by washing and soaking the green moong dal in water for a duration of at least two hours before cooking, with an overnight soak being the optimal choice to enhance the dal’s texture and flavor. After the soaking period, drain the water and transfer the moong dal into a grinder jar. Grind the soaked dal into a smooth batter, adding the ginger-garlic paste, salt to taste, red chilli powder, garam masala powder, and a dash of water to achieve the right consistency.

In a skillet, heat a little sunflower oil over medium heat, and add the prepared dal batter. Stir continuously for a few minutes until the mixture thickens slightly, which should take around 10 to 12 minutes. Following this, incorporate the chopped half tomato, half onion, and the finely chopped garlic and ginger. Stir the mixture again until it becomes a thick and sticky paste. Set this mixture aside to cool down.

Once the mixture has cooled sufficiently, roll small amounts of it into medium-sized balls, roughly the size of a lemon, which are known as ‘goli.’

Next, in a clean pan, heat about one tablespoon of sunflower oil and add the chopped onion, tomato, garlic, and ginger. Sauté the ingredients until they begin to soften, then add the turmeric powder, red chilli powder, and continue to sauté for a few more moments to allow the spices to bloom.

Now, stir in half of the chopped coriander leaves and the chopped green chilli, along with water as needed to create a gravy consistency. Mix everything well and allow the gravy to cook over low to medium heat for approximately 5 to 6 minutes until it thickens.

Gently place the moong dal golis into the simmering curry, ensuring they are nestled well within the sauce, and allow them to cook for an additional 5 to 7 minutes, gently mixing to coat the dumplings in the flavorful gravy.
