Ingredients:

3 cups Milk
1/2 cup Olive oil
2 Yellow onion
1 Garlic cloves
2 Carrots
2 Celery
3 tbsp Horseradish
2 lbs Ground turkey
1 lb Ground pork
2 Eggs
1/2 cup Fresh parsley
2 tbsp Dijon mustard
1/4 cup Coarse salt
2 tsp Ground pepper
1 Bacon
1/2 cup Brown sugar
1/2 cup Ground mustard
1 Tomato paste
1 cup Water

Instructions:

  1. Heat oven to 375 degrees.

  2. Combine bread cubes and milk in small bowl, set aside.

  3. Place onion, garlic, carrots, celery, and horseradish in the bowl of a food processor, fitted with a metal blade. Process until finely chopped, but still recognizable.

  4. Heat olive oil in a large skillet over medium heat. Add chopped vegetables, and cook until softened. Remove from heat and let cool for 5 minutes.

  5. In a large bowl, place: ground turkey, ground pork, bread/milk mixture, eggs, parsley, mustard, salt, pepper, and vegetable mixture. Mix gently, but well.

  6. Place the mixture in an ungreased baking dish and shape into one large, or two smaller loaves. Cover loaves with bacon slices, tucking ends under.

  7. Combine glaze ingredients in a small bowl. Brush over loaf (loaves).

  8. Bake for approximately 90 minutes, or until a meat thermometer reads 160 degrees when inserted into the center of the meatloaf. If crisper bacon is desired, place under the broiler- watch carefully!

  9. Let stand for 10 minutes before slicing.
