Ingredients:

3/4 cup unsalted butter
1 cup flour
3/4 cup cornmeal
1 tsp salt
3 tbsp fresh basil
1/2 cup unsalted butter
7 tbsp sour cream
6 eggs
1/2 tsp white pepper
2 cups cherry tomatoes
1 cup yellow cherry tomatoes

Instructions:

  1. Preheat oven to 375 degrees.

  2. Prepare Crust:

    • Cut the unsalted butter into small pieces.
    • In a food processor, pulse together flour, cornmeal, and salt.
    • Add the butter and pulse until the mixture looks like coarse meal.
    • Gradually add ice water, 1 tablespoon at a time, pulsing after each addition.
    • Press the dough evenly into the bottom and up the sides of a 10x7x1 inch rectangular tart pan (removeable sides are helpful).
    • Trim the dough flush with the top of the tart pan.
    • Chill the crust for 15 minutes, then cover with foil and weights and bake for 10 minutes.
    • Remove the weights and foil and bake for another 5 minutes.
    • Remove and place on a rack to cool while preparing the filling.
  3. Prepare Filling:

    • Chop the fresh basil well.
    • In a large bowl, whisk together the goat cheese, unsalted butter, sour cream, eggs, and white pepper.
    • Stir in the chopped basil.
    • Pour the filling into the prepared crust.
  4. Assemble Tart:

    • Arrange the halved cherry tomatoes, cut side up, over the custard.
    • Lightly press the tomatoes into the custard.
    • Lightly season with salt and pepper.
  5. Bake:

    • Bake the tart in the lower third of your oven for 25 minutes.
  6. Serve:

    • Remove the tart to a cooling rack.
    • Cut and serve warm or freeze for later enjoyment.
