Named after Joanne Woodward in Paul Newman’s Cookbook, this veggie burger is a delightful combination of wholesome ingredients. It’s perfect for a quick, healthy lunch or snack, whether you’re camping or cooking at home. The prep time excludes cooking the rice, so have that ready beforehand!

Ingredients:

  • 1 onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 3 tbsp fresh basil
  • 2 tsp dried basil
  • 1 1/2 cups cooked brown rice
  • 1/3 cup cashews
  • 1/3 cup walnuts
  • 1/3 cup sunflower seeds
  • 1/4 cup tamari soy sauce
  • 2 tbsp tahini

Instructions:

  1. Prepare the Burger Mix:

    • In a frying pan, sauté finely chopped onions and minced garlic in olive oil until onions are translucent.
  2. Combine Ingredients:

    • Stir in fresh basil and dried basil into the onion mixture. Mix well and transfer to a large mixing bowl with the cooked brown rice.
