Bavarian Pot Roast Recipe 🍖

Description: A wonderful roast packed full of flavor, perfect for a cozy fall meal. Serve it with a baked sweet potato or smashed garlic red potatoes for a comforting dinner experience.

Ingredients:

3 Boneless beef chuck roast
1 Carrots
2 Onions
2 Celery stalks
1 Dill pickle
3/4 cup Dry red wine
1/2 cup Beef broth
1/3 cup German mustard
1/2 tsp Black pepper
1/4 tsp Ground cloves
2 Bay leaves
2 tbsp All-purpose flour
4 tbsp Dry red wine (for gravy)
2 cups Beef broth (for gravy)
Pasta (for serving)

Instructions:

  1. Trim extra fat off the beef chuck roast.

  2. Brown the roast in 1 tablespoon of cooking oil in a large skillet.

  3. Drain off excess fat.

  4. Place carrots, onions, celery, and sliced dill pickle in the bottom of your slow cooker.

  5. Position the browned roast on top of the vegetables.

  6. In a small mixing bowl or large measuring cup, combine the red wine (or beef broth), German mustard, black pepper, ground cloves, and bay leaves.

  7. Pour the liquid mixture over the meat in the slow cooker.

  8. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours, until the meat is tender and flavorful.

  9. Remove the meat and vegetables from the slow cooker using a slotted spoon and place them on a platter covered with foil. Discard the bay leaves.

  10. Keep the meat and vegetables warm in a 200°F (93°C) oven while preparing the gravy.

  11. For the gravy, pour the liquid from the slow cooker into a small saucepan and skim off any excess fat.

  12. In a small shaker, combine 4 tablespoons of red wine (or broth) with 2 tablespoons of all-purpose flour. Shake until well blended.

  13. Place the liquid from the slow cooker on medium-high heat and stir in the flour mixture. Cook until the gravy is thickened to your liking.

  14. Serve the gravy over the meat, vegetables, and pasta.

  15. Optionally, top with additional chopped dill pickle and crumbled bacon for extra flavor and texture.
