Stir-Fried Beef and Broccoli
Ingredients:
- 250 grams thinly sliced beef
- 1 head of broccoli, cut into florets
- 3 red curly chilies, sliced
- 1/2 tomato, chopped
- 1 shallot, sliced
- 3 cloves garlic, sliced
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt, sugar, and black pepper to taste
- Cornstarch
- Water
Instructions:
-
Prepare the Aromatics:
Heat a splash of oil in a large skillet or wok over medium heat. Add the sliced shallots and chopped tomato, sautéing until they are nearly cooked through. -
Add Garlic and Chilies:
Toss in the sliced garlic and red chilies. Continue to stir-fry until the garlic is fragrant and the chilies are slightly wilted. -
Cook the Beef:
Introduce the thinly sliced beef into the skillet. Stir-fry until the beef is fully cooked and browned. -
Simmer:
Pour in enough water to cover the beef. Bring to a simmer and cover the pan. Allow the mixture to cook until the water starts to reduce. -
Add Broccoli:
Add the broccoli florets to the skillet. If needed, add a bit more water to ensure there is enough liquid for the broccoli to cook. Cover and cook until the broccoli is tender. -
Season:
Stir in the oyster sauce, sesame oil, salt, sugar, and black pepper. Adjust the seasoning to taste. -
Thicken the Sauce:
In a small bowl, mix a teaspoon of cornstarch with a little water to create a slurry. Add this mixture to the skillet and stir well to thicken the sauce. -
Serve:
Once the sauce has reached your desired thickness and the flavors are well balanced, remove from heat. Serve hot over rice or noodles.
