Savory Beef and Chayote Coconut Stew

Beef and Chayote Stew (Lodeh Kluweh Daging Sapi)

Ingredients

  • 1 ounce beef, cut into small pieces
  • 2 chayote (kluwih), peeled and cut into small pieces
  • 1/2 coconut, grated
  • 200 grams long beans (kacang panjang), trimmed
  • 5 cloves garlic, peeled
  • 5 shallots, peeled
  • 1 small packet dried shrimp (ebi)
  • 15 small red chilies (cabe rawit)
  • 5 green curly chilies (cabe hijau keriting)
  • Palm sugar (gula Jawa) and granulated sugar (gula pasir), to taste
  • Salt, to taste
  • Royco seasoning or a preferred seasoning mix
  • 1 piece galangal (lengkuas), crushed
  • 2 bay leaves (daun salam)

Instructions

  1. Prepare the Chayote: Peel the chayote and cut it into small pieces. Wash thoroughly and boil until slightly tender but not overly soft. Once cooked, drain and set aside.

  2. Prepare the Spice Paste: While the chayote is cooking, peel the shallots and garlic. Blend or grind the shallots, garlic, red chilies, and dried shrimp into a smooth paste. Slice the green chilies into thin rings.

  3. Extract the Coconut Milk: Grate the coconut and squeeze it with water to extract the coconut milk. Set aside.

  4. Cook the Beef: Wash and cut the beef into small pieces. In a large pan or pot, heat a bit of oil and sauté the spice paste until fragrant. Add the sliced green chilies, bay leaves, and crushed galangal. Cook until the paste is well blended and aromatic.

  5. Add Beef: Add the beef pieces to the pan and cook until the meat changes color. Add a small amount of water if needed to help the cooking process. Once the beef is partially cooked, add the chayote pieces and stir well.

  6. Incorporate Coconut Milk: Pour in the freshly extracted coconut milk and bring the mixture to a gentle boil.

  7. Season the Stew: Add palm sugar, granulated sugar, Royco seasoning, and salt to taste. Adjust the seasoning to achieve the desired flavor.

  8. Add Long Beans: Snap the long beans into bite-sized pieces, wash them, and add them to the stew. Continue to cook until the beans are tender and the flavors are well melded.

  9. Final Touches: Taste the stew and adjust the seasoning if necessary. Garnish with crispy fried shallots if desired.

  10. Serve: Enjoy your delicious beef and chayote stew, perfect with steamed rice or as a hearty meal on its own.
