Beef and Chicken Galantin with Tomato Sauce

Galantin, a traditional Indonesian dish, combines tender beef and chicken wrapped in a savory casing, perfect for a festive meal or a comforting dinner. This recipe includes a delicious homemade tomato sauce and a selection of fresh vegetables to complement the galantin.

Ingredients

For the Galantin:

  • 150 grams of beef
  • 150 grams of chicken
  • 2 slices of bread (white)
  • 100 ml of liquid milk
  • 1 tablespoon of sago flour (tapioca flour)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg

For the Sauce:

  • 3 tablespoons ketchup
  • 1/2 onion, finely chopped
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 teaspoon sweet soy sauce (kecap manis)
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 2 garlic cloves, crushed
  • Cooking oil for sautéing

For Serving:

  • Carrots, sliced
  • Broccoli florets
  • Green beans
  • Fried potatoes
  • Lettuce leaves

Instructions

  1. Prepare the Galantin:

    • Soak the slices of bread in the milk and set aside. In a blender, combine the beef and chicken. Add the soaked bread, sago flour, salt, black pepper, and nutmeg. Blend until the mixture is smooth and well combined.
    • Form the mixture into three cylindrical shapes and wrap each with a piece of parchment paper or banana leaves, securing the ends.
    • Steam the wrapped galantin for 20 minutes, or until fully cooked. Once done, remove from the steamer and let cool slightly. Unwrap, then pan-fry in butter or cooking oil until golden brown on all sides. Allow to cool, then slice the galantin on a diagonal.
  2. Make the Tomato Sauce:

    • In a skillet, heat a small amount of cooking oil over medium heat. Add the crushed garlic and sauté until fragrant.
    • Stir in the ketchup and add 150 ml of water. Bring to a boil, then reduce heat and simmer.
    • Add the finely chopped onion, salt, black pepper, sugar, Worcestershire sauce, sweet soy sauce, and nutmeg. Adjust seasoning to taste.
    • In a small bowl, mix the cornstarch with a little water to make a slurry. Stir the slurry into the sauce and cook until the sauce thickens. Remove from heat and set aside.
  3. Prepare the Accompaniments:

    • Boil or steam the carrots, broccoli, and green beans until tender. Alternatively, you can sauté them lightly in a pan.
    • Fry the potatoes until golden brown and crispy.
    • Arrange the vegetables and fried potatoes on a serving plate with the sliced galantin.
  4. Serve:

    • Drizzle the tomato sauce over the sliced galantin or serve it on the side.
    • Garnish with fresh lettuce leaves and serve immediately.
