Beef and Potato Stew

Ingredients:

  • 200 grams beef, cut into 1 cm thick slices
  • 2 potatoes, peeled and sliced
  • 1 tomato, chopped
  • 2 stalks celery, sliced
  • 3 bird’s eye chilies, sliced
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon sweet soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon beef seasoning (like Royco)
  • 1 liter water
Spice Paste:
  • 4 shallots
  • 2 garlic cloves

Instructions:

  1. Prepare the Potatoes: Peel the potatoes and cut them into slices according to your preference. Fry the potato slices until they are golden and crispy. Set them aside.

  2. Prepare the Beef: Clean and slice the beef into 1 cm thick pieces.

  3. Make the Spice Paste: Blend the shallots and garlic cloves into a fine paste.

  4. Cook the Beef: Heat some oil in a pan and sauté the spice paste until fragrant. Add the beef slices and cook until they are browned.

  5. Add the Liquid: Pour in 1 liter of water. Bring it to a boil.

  6. Add Vegetables and Seasonings: Once the water is boiling, add the chopped tomato, sliced chilies, celery, and ground black pepper. Let the mixture simmer until the beef is tender and the flavors have melded together.

  7. Season: Add the sweet soy sauce, salt, sugar, and beef seasoning to taste. Adjust the seasoning as needed.

  8. Finish and Serve: Check the seasoning and adjust if necessary. Once the stew has thickened and the flavors have developed, remove from heat. Serve hot with the crispy potato slices.
