Hearty Red Bean Beef Soup

Ingredients:

  • 300 grams beef, diced into cubes
  • Red beans (quantity as desired)
  • 4 shallots
  • 4 garlic cloves
  • 1 candlenut
  • 1 stalk lemongrass, bruised
  • Fresh ginger, sliced
  • 2 scallions, sliced
  • A handful of fresh celery leaves
  • Carrots, sliced
  • Cauliflower florets
  • Macaroni
  • Salt, to taste
  • Flavor enhancer (optional)
  • Ground pepper, to taste
  • Cooking oil

Instructions:

  1. Prepare the Red Beans: Begin by cooking the red beans. Use plenty of water, as red beans take time to soften. Cook until the beans are tender and can be easily pierced with a fork.

  2. Prepare Fried Shallots: While the beans are cooking, prepare the fried shallots. Slice 2 of the shallots thinly. Heat a sufficient amount of oil in a pan and fry the shallots until they turn golden brown and crispy. Remove from the pan and drain on paper towels.

  3. Make the Spice Paste: For the spice paste, blend together 1 candlenut, 4 garlic cloves, and 2 shallots until smooth. For best results, use a blender.

  4. Sauté the Spice Paste: In a separate pan, heat a small amount of oil. Add the spice paste and sauté with the bruised lemongrass and sliced ginger until aromatic.

  5. Combine Ingredients: Once the red beans are cooked, add the diced beef, sliced carrots, cauliflower florets, and macaroni to the pot. Stir in the sautéed spice paste.

  6. Season the Soup: Add salt, ground pepper, and a flavor enhancer (if using) to taste. Allow the soup to simmer until the beef is fully cooked and tender.

  7. Add Final Touches: Once the beef is cooked, sprinkle in sliced scallions, celery leaves, and the fried shallots. Stir well.

  8. Serve: Your hearty red bean beef soup is ready to be enjoyed. Serve hot and savor the comforting flavors of this delightful dish!
