Beef and Vegetable Congee Recipe

Ingredients:

  • 1 cup of red rice (you can substitute with white rice if preferred)
  • 1 cup of finely chopped broccoli
  • 1 cup of finely chopped carrots
  • 1 cup of finely chopped bell peppers
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of finely chopped beef
  • 2 tablespoons of sesame oil
  • Nori (optional, for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Sauté the Beef:

    • Heat the sesame oil in a large pot over medium heat. Add the finely chopped beef and cook until it starts to brown.
  2. Add Aromatics:

    • Once the beef is browned, add the minced garlic and chopped onion to the pot. Sauté until the garlic and onion are fragrant and translucent.
  3. Incorporate the Rice:

    • Stir in the rice, allowing it to lightly toast with the beef and aromatics for a few minutes, stirring occasionally.
  4. Add Vegetables:

    • Add the chopped broccoli, carrots, and bell peppers to the pot. Stir well to combine with the rice mixture.
  5. Simmer the Congee:

    • Pour in enough water to cover the rice and vegetables. Bring to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the rice breaks down and the mixture reaches a porridge-like consistency, approximately 30-40 minutes.
  6. Serve:

    • Once the congee is cooked to your desired consistency, remove from heat. Ladle the congee into bowls.
  7. Garnish (Optional):

    • If using, crumble some nori over the top of each bowl. Sprinkle with sesame seeds if desired.
  8. Enjoy:

    • Serve hot, and enjoy this nourishing and comforting bowl of beef and vegetable congee!
