1 | Can of tomatoes |
1/2 | Cup of pearl barley |
3/4 | Cup of frozen corn |

4 | Tablespoons of tomato paste |
2 | Cups of water |
2 | Hash browns |
2 | Garlic cloves |

Instructions:
-
Prepare Ingredients: Start by gathering all the ingredients listed up to the tomato paste.
-
Combine Ingredients: In a large pot, add the ground beef, onion, celery, carrots, canned tomatoes, pearl barley, frozen corn, chicken bouillon cube, and tomato paste.
-
Stir: Give the ingredients a good stir to combine them well.
-
Simmer: Pour enough water into the pot to just cover the ingredients. Bring the mixture to a hard boil, then reduce the heat to a simmer. Let it simmer gently for about 1 hour, stirring occasionally.
-
Add Hash Browns: After simmering for an hour, add the hash browns to the pot. Stir them into the soup and let them cook for 5 minutes.
-
Season to Taste: Taste the soup and adjust the seasoning if necessary. You can add more garlic, salt, pepper, or basil according to your preference.
-
Serve: Ladle the hot soup into bowls and serve immediately. Enjoy the comforting flavors of this Easy Beef Soup!
Chili Beef Soup Variation:
- For a spicier twist, try making Chili Beef Soup! Simply omit the peas, barley, and frozen corn from the original recipe.
- Instead of frozen corn, use canned sliced baby corn.
- Reduce the amount of chicken bouillon cubes to 2.
- Skip the basil from the original recipe and offer red pepper flakes at the table for added heat.
- When cooking, be sure not to bring the soup to a hard boil. Instead, bring it to an almost boil, then reduce the heat and simmer gently. Follow the original recipe instructions, stirring gently to avoid mashing the beans.
Enjoy this hearty and flavorful soup, perfect for cozy nights in or sharing with loved ones!
