For the Sauce:

- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, minced
- 1 onion, finely chopped
- 1/2 carrot, julienned (optional)
- 2 tablespoons granulated sugar
- 8-10 tablespoons tomato sauce
- 4 tablespoons chili sauce
- 1 tablespoon cornstarch mixed with 5 tablespoons water
- 2 tablespoons green peas
- Salt to taste
- 250 ml water
Instructions:
-
Prepare the Egg Mixture:
- In a large bowl, crack the eggs and whisk them until well beaten. If using, add 2 tablespoons of all-purpose flour to the eggs and mix thoroughly.
- Incorporate the finely chopped beef, grated carrot, finely sliced green onions, finely chopped onion, minced garlic, ground black pepper, and salt to the egg mixture. Stir well until all ingredients are evenly distributed and the mixture begins to froth.
-
Cook the Fu Yung Hai:
- Heat a pan over medium-high heat and add a generous amount of cooking oil. Once the oil is hot, pour in the egg mixture.
- Allow the mixture to cook undisturbed until the bottom is golden brown. Gently flip the omelette to cook the other side until it achieves a uniform golden brown color. Remove from the pan and transfer to a serving plate.
-
Prepare the Sauce:
- In a separate pan, heat some oil over medium heat. Add the minced garlic, minced ginger, and finely chopped onion. Stir-fry until the onions become translucent and aromatic.
- Add the julienned carrot (if using) and green peas. Stir for a couple of minutes.
- Pour in the water and add the granulated sugar, tomato sauce, and chili sauce. Stir to combine.
- Add the cornstarch mixture to thicken the sauce, stirring continuously until the sauce reaches a smooth consistency.
- Season with salt to taste and adjust the seasoning as needed.
-
Serve:
- Spoon the prepared sauce over the cooked Fu Yung Hai.
- Serve immediately while hot, for the best flavor experience.
