Easy Beef Hand Pies
Ingredients:

Puff Pastry:
- 2 sheets of pre-made puff pastry, thawed to room temperature
- A bit of flour for dusting the work surface

Filling:
- 150 grams ground beef
- 1/2 cup frozen vegetables (thawed)
- 1 small onion, coarsely chopped
- 1 tablespoon tomato ketchup
- 1/2 teaspoon black pepper
- 1/2 teaspoon beef bouillon powder
- 1 teaspoon granulated sugar
- Salt to taste (optional)
- 1 tablespoon butter or margarine
- 1 tablespoon cooking oil

Seal and Glaze:
- 1 egg white for sealing
- 1 egg yolk mixed with 1 tablespoon milk, beaten for glazing

Prepare the Filling:
- In a skillet, heat the cooking oil and butter or margarine over medium heat. Add the chopped onion and ground beef, cooking until the beef is browned and the onion is softened.
- Add the thawed frozen vegetables to the pan. Stir in the beef bouillon powder, sugar, black pepper, and tomato ketchup. Mix well and cook until the vegetables are tender and the mixture is heated through.
- Taste and adjust seasoning with salt if necessary. Remove from heat and allow the filling to cool completely.

Assemble the Hand Pies:
- Lightly flour your work surface and rolling pin. Place one sheet of puff pastry on the floured surface and roll it out slightly to smooth it.
- Brush off any excess flour from the pastry using a pastry brush or paper towel.
- Cut the pastry into 4 equal squares. Place a spoonful of the cooled beef mixture onto the center of each square.
- Brush the edges of each pastry square with egg white. Fold the pastry over the filling to form a triangle. Press the edges together to seal, and use a fork to crimp the edges if desired.
- Repeat with the second sheet of puff pastry and remaining filling.

Glaze and Bake:
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Place the hand pies on the prepared baking sheet. Brush the tops with the egg yolk and milk mixture. Make 2 or 3 small slits on top of each pie with a knife to allow steam to escape. Optionally, sprinkle with chopped parsley for added flavor.
- Bake in the preheated oven for about 30 minutes, or until the pastries are golden brown and crisp.
