Easy Beef Hand Pies

  1. Prepare the Filling:

    • In a skillet, heat the cooking oil and butter or margarine over medium heat. Add the chopped onion and ground beef, cooking until the beef is browned and the onion is softened.
    • Add the thawed frozen vegetables to the pan. Stir in the beef bouillon powder, sugar, black pepper, and tomato ketchup. Mix well and cook until the vegetables are tender and the mixture is heated through.
    • Taste and adjust seasoning with salt if necessary. Remove from heat and allow the filling to cool completely.
  2. Assemble the Hand Pies:

    • Lightly flour your work surface and rolling pin. Place one sheet of puff pastry on the floured surface and roll it out slightly to smooth it.
    • Brush off any excess flour from the pastry using a pastry brush or paper towel.
    • Cut the pastry into 4 equal squares. Place a spoonful of the cooled beef mixture onto the center of each square.
    • Brush the edges of each pastry square with egg white. Fold the pastry over the filling to form a triangle. Press the edges together to seal, and use a fork to crimp the edges if desired.
    • Repeat with the second sheet of puff pastry and remaining filling.
  3. Glaze and Bake:

    • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
    • Place the hand pies on the prepared baking sheet. Brush the tops with the egg yolk and milk mixture. Make 2 or 3 small slits on top of each pie with a knife to allow steam to escape. Optionally, sprinkle with chopped parsley for added flavor.
    • Bake in the preheated oven for about 30 minutes, or until the pastries are golden brown and crisp.
  4. Serve and Enjoy:

    • Allow the hand pies to cool slightly before serving. Enjoy these savory pastries as a delicious snack or a hearty addition to any meal. They’re perfect for lunchboxes or as a satisfying treat anytime.
