Beef Intestine Soup (Sop Usus Sapi)
Ingredients:
- 1/4 kg beef intestines
- 1 carrot
- 1/4 kg cabbage
- 1 tomato
- 1 stalk green onion
- 2 stalks celery
- Seasonings:
- 5 cloves garlic
- 3 shallots
- 1 packet of Ladaku seasoning
- 1 packet of beef-flavored Masako seasoning
- Cooking oil (as needed)
- Water (as needed)
Instructions:
-
Prepare the Beef Intestines: Begin by thoroughly cleaning the beef intestines under cold running water. Place them in a pot and boil for approximately 15 minutes to remove any impurities. Drain, then cut the intestines into bite-sized pieces and set aside.
-
Prepare the Vegetables: Wash and peel the carrot, then cut it into small pieces. Chop the cabbage into thin strips. Rinse and cut the green onion into small sections, and slice the tomato into wedges. Set all vegetables aside.
-
Prepare the Aromatics: Thinly slice the shallots and fry them in a pan with a small amount of cooking oil until they turn golden brown and crispy. Remove from the pan and drain on paper towels.
-
Sauté the Garlic: Crush the garlic cloves and sauté them in the same pan used for the shallots until fragrant. Add enough water to the pan to form the base of your soup.
-
Cook the Vegetables: Once the water begins to boil, add the carrot and cabbage. Allow them to cook until they are partially tender.
-
Combine Ingredients: Add the previously prepared beef intestines to the pot, followed by the Ladaku seasoning and beef-flavored Masako seasoning. Stir well to combine all ingredients.
-
Simmer and Season: Let the soup cook until all ingredients are fully cooked and the flavors have melded together. Taste and adjust seasoning if necessary.
-
Finish and Serve: Turn off the heat and stir in the chopped green onion, celery, and tomato. Allow the residual heat to lightly cook the green onion and celery, infusing their flavors into the soup.
-
Serving Suggestion: Ladle the soup into bowls and serve hot. Enjoy this hearty and flavorful soup as a comforting meal.
