Beef Kwetiau Stir-Fry: A Flavorful Malaysian Delight

Ingredients:

  • 100g kwetiau (flat rice noodles)
  • 50g beef (sliced thinly)
  • 1 egg
  • 100g cabbage (shredded)
  • 10 stalks of mustard greens
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 5 red chili peppers (sliced thinly)
  • 1 teaspoon sesame oil
  • 4 tablespoons vegetable oil
  • 2 tablespoons oyster sauce
  • Salt to taste
  • Seasoning (optional, to taste)
  • Water (as needed)

Instructions:

  1. Prepare the Kwetiau: Begin by washing the kwetiau thoroughly under cold running water. Drain and set aside.

  2. Prepare the Vegetables and Beef: Thinly slice the beef and set aside. Shred the cabbage, chop the mustard greens, and finely chop the onion. Slice the red chili peppers thinly. Mince the garlic.

  3. Cook the Egg: Heat a tablespoon of vegetable oil in a non-stick pan over medium heat. Crack the egg into the pan, add a pinch of salt, and scramble until fully cooked. Remove from the pan and set aside.

  4. Sauté Aromatics: In the same pan, add the remaining vegetable oil and heat it over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.

  5. Cook the Beef: Add the sliced beef to the pan. Cook, stirring occasionally, until the beef is browned and cooked through.

  6. Add Vegetables and Spices: Toss in the shredded cabbage, mustard greens, and sliced red chili peppers. Stir-fry until the vegetables start to wilt.

  7. Season the Dish: Pour in enough water to just cover the vegetables, then add the oyster sauce, sesame oil, salt, and seasoning (if using). Stir well to combine.

  8. Add Kwetiau and Egg: Gently fold in the kwetiau and the scrambled egg. Stir-fry until the noodles are heated through and have absorbed the flavors from the sauce and vegetables. Adjust seasoning to taste.

  9. Finish and Serve: Once everything is well-mixed and heated through, turn off the heat. Serve the beef kwetiau hot, garnished with additional chili peppers if desired.

Enjoy this savory and satisfying dish that brings a taste of Malaysia right to your table. Perfect for a quick weeknight meal or a flavorful lunch, this beef kwetiau stir-fry is sure to delight your taste buds with its vibrant flavors and textures.
