Sum2 Sapi with Green Chilies

Ingredients:

  • 1 lb beef marrow bones (Sum2 sapi), steamed and cut into cubes
  • 2 shallots, finely sliced
  • 3 cloves garlic, finely sliced
  • 1 small onion, diced
  • 3-4 green chilies, sliced
  • 1 small apple tomato, chopped
  • Salt to taste
  • Optional: beef bouillon or seasoning cube (Royco sapi)

Instructions:

  1. Prepare the Ingredients:

    • Slice the shallots and garlic thinly.
    • Dice the onion and chop the green chilies and tomato.
  2. Sauté the Aromatics:

    • Heat a pan with a bit of oil over medium heat.
    • Add the shallots, garlic, and diced onion to the pan. Sauté until fragrant and translucent.
  3. Add Green Chilies:

    • Once the onions and garlic are aromatic, add the sliced green chilies to the pan. Cook for a few minutes until the chilies begin to soften.
  4. Cook the Beef Marrow Bones:

    • Add the steamed and cubed beef marrow bones to the pan. Stir well and cook until the meat is thoroughly heated and slightly browned.
  5. Season and Add Tomatoes:

    • Season the mixture with salt to taste.
    • Add the chopped apple tomato and stir well. Cook until the tomato has softened and blended with the other ingredients.
  6. Optional Enhancement:

    • For additional flavor, you can add a small amount of beef bouillon or a seasoning cube (Royco sapi) if desired. Stir well to combine.
  7. Serve:

    • Remove from heat and transfer to a serving dish. Serve hot and enjoy!
