Sayur Lodeh Sapi Tanpa Santan

Ingredients:

  • 200 grams beef (preferably shank; today I used chuck)
  • 1/4 head of cabbage
  • 1 large carrot
  • 1 bunch of long beans
  • 2 small zucchinis
  • Spice Paste:
    • 5 shallots
    • 3 garlic cloves
    • 2 candlenuts
    • 1 thumb-sized piece of galangal
    • A pinch of coriander
  • Additional Ingredients:
    • 5 red curly chilies
    • 7 orange bird’s eye chilies
    • 3 bay leaves
    • Salt
    • Sugar

Instructions:

  1. Prepare the Beef:
Begin by briefly boiling the beef to remove any unpleasant odor. This step helps ensure a cleaner, more refined flavor in the final dish.

  2. Prepare the Spice Paste:
While the beef is boiling, make the spice paste. Blend together shallots, garlic, candlenuts, galangal, and coriander until smooth. This blend forms the aromatic base of the dish.

  3. Cook the Spice Paste:
Heat a pan over medium heat and add a splash of oil. Sauté the spice paste, red curly chilies, bird’s eye chilies, and bay leaves until fragrant. The chilies will add layers of heat and flavor, so adjust the amount based on your spice preference.

  4. Combine Beef and Spice Paste:
Add the boiled beef to the pan with the sautéed spice paste. Stir briefly to combine and allow the flavors to meld.

  5. Simmer:
Pour in enough water to cover the beef. Bring to a boil and then lower the heat to let it simmer. Cook until the beef is tender.

  6. Add Vegetables:
Incorporate the carrot, cabbage, long beans, and zucchini into the pot. Season with salt and sugar according to taste. Allow the vegetables to cook until tender, ensuring all ingredients are well combined and flavorful.

  7. Final Adjustments:
Taste the broth and adjust seasoning if necessary. The final dish should have a harmonious balance of savory, sweet, and spicy flavors.

  8. Serve:
Once all the vegetables are cooked through and the flavors are well balanced, your Sayur Lodeh Sapi Tanpa Santan is ready to be served. Enjoy this delightful, comforting dish with steamed rice.

This recipe offers a wholesome, satisfying meal without the use of coconut milk, providing a lighter yet equally delicious alternative to traditional Sayur Lodeh. Perfect for a cozy family dinner or a casual gathering with friends. Enjoy! 😊
