Beef Short Rib Soup (Sop Iga Sapi)

Ingredients:

  • 500 grams beef short ribs
  • 250 grams carrots, peeled and chopped
  • 250 grams potatoes, peeled and diced
  • 1 stalk celery, chopped
  • 1 stalk green onions, chopped
  • Fried shallots, to taste
  • Ground black pepper, to taste
  • 3 cloves garlic, minced
  • 3 cm cinnamon stick
  • 3 cardamom pods
  • Ground nutmeg, to taste
  • Salt, to taste
  • Royco seasoning (or bouillon cube), to taste
  • 4 liters water for boiling the meat

Instructions:

  1. Prepare the Beef:
    Begin by bringing the water to a boil in a large pot. Add the beef short ribs to the boiling water. Cook the ribs until they are tender, which should take about 1 to 1.5 hours, depending on the size of the pieces.

  2. Add Vegetables and Spices:
    Once the beef is tender, add an additional 1 liter of water to the pot. Bring it back to a boil. Add the diced potatoes and chopped carrots. Along with the vegetables, add minced garlic, cinnamon stick, cardamom pods, ground nutmeg, and a pinch of salt. Let the soup simmer until the vegetables are cooked through, about 15-20 minutes.

  3. Season and Final Touches:
    Taste the soup and adjust the seasoning with more salt, ground black pepper, and Royco seasoning or bouillon cubes if needed. Just before serving, stir in the chopped green onions and celery. Allow them to cook for a few minutes to release their flavors.

  4. Serve:
    Turn off the heat and garnish the soup with fried shallots. Serve the soup hot, enjoying its fresh, savory flavors.
