Beef & Vegetable Japanese Curry Rice Recipe
Ingredients:
- 1/2 large onion, sliced
- 200 grams beef, cut into bite-sized cubes
- 2 medium potatoes, peeled and cubed
- 1 large carrot, sliced
- A handful of green beans, trimmed
- A handful of mushrooms, sliced
- 2 blocks (1/2 package) Japanese curry blocks
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 2 plates of rice (I used a mix of white and red rice)
- 700-800 ml water

Prepare the Vegetables and Meat: Begin by slicing the onion and cutting the potatoes, carrot, green beans, and mushrooms into pieces. Ensure the pieces are not too small to prevent them from disintegrating during cooking. Feel free to substitute with other vegetables such as broccoli if preferred. In this recipe, I used leftover vegetables.

Sauté the Onion: Heat the vegetable oil in a pot over medium heat. Add the sliced onion and cook until softened.

Cook the Vegetables: Add the potatoes, carrot, green beans, and mushrooms to the pot. Sauté them briefly to help them retain their shape during the cooking process. This step is essential as it prevents the vegetables from becoming too mushy. (This tip was shared by Akari Papa and it works wonderfully!)

Add the Beef: Incorporate the beef cubes into the pot and cook until the meat is no longer pink.

Simmer: Pour in the water and bring to a boil. Skim off any white foam that forms on the surface, then reduce the heat and let the mixture simmer for about 20 minutes.

Add Curry Blocks: Stir in the Japanese curry blocks and continue to stir until they have completely dissolved. Add the soy sauce and ketchup, then let the curry simmer for an additional 5-10 minutes, allowing the flavors to meld together.

Rest and Serve: For enhanced flavor, consider refrigerating the curry overnight. This resting period allows the spices to fully infuse into the dish, making it even more delicious the next day.

Serve: Serve the hearty beef and vegetable curry over a bed of rice. Enjoy this comforting and flavorful meal!
