Buntut Sapi Lada Hitam (Black Pepper Oxtail Stew)

Ingredients:

  • 500 grams frozen oxtail
  • 2 tablespoons Saori soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Ground spices:
    • 3 cloves garlic
    • 5 shallots
    • 3 green chilies
    • 5 red bird’s eye chilies (cabe rawit merah)
    • 2 sachets of Ladaku seasoning
  • Beef broth
  • Cooking oil
  • ½ medium onion, thinly sliced
  • 1 tomato, cut into 4 wedges
  • For grinding:
    • 5 shallots
    • 3 cloves garlic
    • Bird’s eye chilies

Instructions:

  1. Prepare the Oxtail:

    • Rinse the frozen oxtail under running water to defrost and clean. Boil approximately 2 liters of water in a pot, then add the oxtail and cook until tender. Once cooked, drain the oxtail, keeping the broth for later use.
  2. Cooking Preparation:

    • Heat a small amount of cooking oil in a pan. Since the oxtail will release its own fat, you don’t need much oil.
    • Sauté the ground spices (garlic, shallots, green chilies, and red bird’s eye chilies) until fragrant. Add the sliced onion and cook until it softens and becomes translucent.
  3. Combine Ingredients:

    • Add the green chilies and the drained oxtail to the pan. Pour in the reserved beef broth and cover. Allow the mixture to come to a boil, stirring occasionally.
  4. Season and Simmer:

    • Stir in the Saori soy sauce, Ladaku seasoning, tomato wedges, and sweet soy sauce. Mix well and cover the pan to let the flavors meld together. Cook until the liquid reduces and the oxtail releases its natural oil.
  5. Final Touches:

    • Check the seasoning and adjust the taste if needed. If you prefer a sweeter flavor, you can add a bit of granulated sugar.
  6. Serve:

    • Once the sauce has thickened and the oxtail is tender, remove from heat. Serve hot, garnished with additional sliced green chilies or fresh herbs if desired.
