Instructions

  1. Prepare the Dough:

    • In a bowl, beat the eggs well. In another bowl, combine all-purpose flour with salt and olive oil.
    • Reserve some beaten egg in a small bowl and gradually incorporate the remaining beaten egg into the flour mixture. Knead slowly to form a stiff dough. Cover and set aside to rest.
  2. Make the Broccoli Filling:

    • Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Add the finely chopped garlic and sauté until golden.
    • Add the chopped broccoli and sauté for a few minutes until tender. Season with Italian seasoning and crushed black peppercorns.
    • Transfer the mixture to a bowl, add grated mozzarella cheese, and mix well. Set aside.
  3. Prepare the Red Sauce:

    • In a non-stick pan, heat a little olive oil and sauté the remaining garlic until golden brown.
    • Add the pureed tomatoes and cook for 3-4 minutes until fragrant. Stir in chopped spinach and corn, mixing well, and cook for an additional 2-3 minutes.
    • Season with red chili flakes, crushed peppercorns, and torn basil leaves. Remove from heat and set aside.
  4. Make the White Sauce:

    • In a separate pan, melt butter and add the flour. Sauté until lightly browned.
    • Gradually add the milk, stirring continuously to avoid lumps. Cook until thickened, creating a creamy white sauce. Season with salt and black pepper.
  5. Assemble the Ravioli:

    • Bring a large pot of water to a boil and add olive oil and salt.
    • Dust a clean countertop with flour and roll out the dough into thin sheets. Use a cookie cutter or similar tool to cut into round shapes.
    • Place a small amount of the broccoli filling on half of the rounds, brush the edges with reserved beaten egg, and cover with the other half. Press down the edges firmly and seal with a fork, creating a decorative pattern.
  6. Cook the Ravioli:

    • Carefully add the prepared ravioli to the boiling water and blanch until they float, approximately 3-4 minutes. Remove with a slotted spoon and drain.
  7. Combine the Sauces:

    • In a large deep pan, combine the red and white sauces and heat gently. Add the blanched ravioli and toss gently to coat them well in the sauce.
  8. Serve:

    • Garnish the ravioli with fresh basil leaves and serve immediately. This dish pairs wonderfully with garlic bread or bruschetta topped with olives, offering a comforting meal that delights the senses.

Embrace the flavors of Italy with this ravioli dish that showcases the wholesome goodness of broccoli, complemented by the rich and creamy sauces. Enjoy your culinary adventure!
