Prepare the Sauce:
Begin by preparing the sauce. Peel and finely slice the onion. In a pan, heat a drizzle of extra virgin olive oil and sauté the onion on low heat for a few minutes until softened. Meanwhile, cut the sausage into small 4 cm pieces. Add the sausage and tomato paste to the pan. Stir well, season with salt and black pepper, and cook gently with the lid on for about 20 minutes, stirring occasionally. -
Make the Béchamel Sauce:
In a separate pot, melt the butter over low heat. Once melted, turn off the heat and whisk in the flour. Gradually pour in the warm milk, whisking continuously to avoid lumps. Return the pot to the heat and bring the sauce to a simmer, stirring until it thickens. Season with salt and a touch of nutmeg. The béchamel should be creamy but slightly runny. -
Prepare the Squash:
Peel and deseed the Delica squash. Cut it into small cubes. This squash will cook in the lasagna, so there’s no need to pre-cook it. Set aside. -
Assemble the Lasagna:
Preheat your oven to 180°C (350°F). In a rectangular baking dish (30×20 cm), spread a thin layer of béchamel sauce on the bottom. Place a layer of lasagna sheets over the sauce, followed by a layer of the sausage sauce, cubes of squash, and mozzarella pieces. Repeat the layering process, alternating between lasagna sheets, béchamel, sausage sauce, squash, and mozzarella until all ingredients are used up. Finish with a final layer of béchamel, squash, sausage sauce, mozzarella, and a sprinkle of Grana Padano cheese. -
Bake:
Place the lasagna in the preheated oven and bake for 40 minutes or until the top is golden and bubbling. Once baked, remove from the oven and let it cool slightly before serving. -
Serve and Enjoy:
Allow the lasagna to cool for a few minutes before cutting and serving. Garnish with fresh chopped parsley for added flavor and color.
