Instructions

  1. Begin by heating a generously oiled large skillet over medium-high heat. Add the beef to the pan in batches, allowing it to sear and brown until it reaches your desired level of doneness. Remove the cooked beef from the pan and set it aside on a plate, keeping it warm.

  2. In the same pan, add the chopped yellow onion and red capsicum, along with your chosen Cajun seasoning. Sauté the vegetables while stirring continuously, allowing them to soften and the onions to turn a light golden brown, which should take about 3-5 minutes.

  3. Next, wash and cut each tomato into eight wedges. Add these juicy wedges to the pan, stirring to incorporate them with the sautéed vegetables. Allow the mixture to simmer uncovered for approximately 15 minutes, or until it thickens to a hearty consistency, stirring occasionally to prevent sticking.

  4. Once the tomato mixture has thickened, return the previously cooked beef to the pan. Gently toss the beef with the tomato and vegetable mixture, ensuring all the flavors meld together beautifully.

  5. While the beef mixture is warming through, prepare the French baguette. Trim the ends of the baguette and cut it into quarters. Carefully split each quarter almost all the way through, creating a pocket for the filling.

  6. Line the inside of each bread pocket with fresh lettuce leaves. Just before serving, generously divide the beef and vegetable mixture among the prepared bread pieces, making sure each bite is packed with flavor and nutrients.
