- 2 tbsp margarine
- 1 carrot, finely chopped
- 1 onion, finely chopped
- 1 celery stalk, finely chopped

- 2 eggs
- 1 cup bread crumbs
- 1/2 cup + 2 tbsp ketchup
- 1/4 cup milk
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 2 tsp ground cumin
- 1 tsp thyme
- 1/2 tsp ground nutmeg
- 1/2 tsp cayenne pepper
- 1/2 tsp fresh coarse ground black pepper
Instructions:
- In a nonstick 12-inch skillet, melt the butter over medium heat.
- Add the carrots, onion, celery, and green pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes.
- Add the minced garlic and cook for an additional 1 minute. Set aside to cool slightly.
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, eggs, bread crumbs, 1/2 cup of ketchup, milk, Worcestershire sauce, salt, ground cumin, thyme, ground nutmeg, cayenne pepper, black pepper, and the cooked vegetables. Mix until well blended, but avoid overmixing.
