Ingredients:
-
Dough:
- 2 tsp active dry yeast
- 1/2 cup granulated sugar
- 1 tsp salt
- 7 1/4 cups bread flour
- 1 3/4 cups warm water
- 4 eggs
- 1/2 cup butter, softened
-
Caramelized Onions:
- 2 tbsp butter
- 2 onions, thinly sliced
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 tsp granulated sugar
- 2 tsp Worcestershire sauce
- 1/4 cup water
-
Glaze:
- 2 egg whites
- 1 tbsp water
Instructions:
-
Prepare the Dough:
- In a mixing bowl, combine yeast, sugar, salt, 3 cups of flour, warm water, eggs, and softened butter.
- Beat on high speed for 3 to 5 minutes until the mixture is very smooth.
- Using a wooden spoon, stir in 3 cups of flour. Continue adding flour 1/2 cup at a time until the dough becomes too stiff to stir.
- Turn the dough out onto a work surface and knead in the remaining flour, kneading for about 7 to 10 minutes until the dough is smooth and elastic. Use the last 1/4 cup of flour only if needed to prevent sticking.
- Grease a large bowl, place the dough in it, turning to coat. Cover the bowl and let the dough rise in a warm place until it has doubled in bulk, which usually takes about 1 1/2 hours.
-
Prepare the Caramelized Onions:
- While the dough is rising, prepare the caramelized onions.
- Melt 2 tablespoons of butter in a skillet over low heat.
- Add thinly sliced onions, minced garlic, salt, and pepper to the skillet. Cover and cook, stirring occasionally, for 10 to 12 minutes or until the onions are very soft.
- Sprinkle in granulated sugar and increase the heat to medium-low. Stir until the onions are very brown but not scorched, which takes about 2 to 3 minutes.
- Add Worcestershire sauce, scrape up any browned bits from the bottom of the skillet, and simmer, stirring until the juices evaporate. Allow the caramelized onions to cool.
-
Assemble and Bake the Buns:
- Once the dough has doubled in size, punch it down and knead in the cooled caramelized onions until they are evenly distributed.
- Divide the dough into 10 equal portions and shape each portion into a smooth round bun.
- Place the buns on two baking sheets lined with parchment paper. Cover them and let them rest for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together the egg whites and water to make the glaze. Brush this glaze over each bun.
- Bake the buns in two batches in the center of the preheated oven for 20 to 22 minutes, or until they are golden brown and the tops sound hollow when tapped.
-
Serve and Enjoy:
- Once baked, remove the caramelized onion buns from the oven and allow them to cool slightly on a wire rack.
- Serve warm or at room temperature. These buns are perfect for brunches, picnics, or as a savory addition to any meal.
This recipe yields fluffy, aromatic buns infused with the sweet, savory flavor of caramelized onions, making them a delightful treat for any occasion. Enjoy the process of making these buns and savor the delicious results with your loved ones!
