Instructions:
-
Soften the butter and cheddar cheese. Allow them to reach room temperature for easier mixing.
-
Whisk together the dry ingredients. In a small bowl, combine the flour, salt, and both types of pepper. Ensure they are evenly mixed.
-
Cream the cheese with the butter. In a mixing bowl, beat the cheddar cheese with the softened butter until well combined and creamy.
-
Incorporate the dry ingredients. Gradually add the flour mixture to the cheese and butter mixture while mixing on low speed. Continue until the dough is well blended.
-
Chill the dough. Scrape the dough onto a piece of plastic wrap and refrigerate for about 1 hour, or until firm.
-
Shape the dough. Form the chilled dough into three 1-inch-diameter rolls.
-
Wrap and store the dough. Individually wrap each roll in plastic wrap, and if freezing, wrap in aluminum foil as well. Refrigerate for up to 3 days or freeze for up to 3 months.
-
Preheat the oven. Place 3 oven racks in the upper and lower thirds of the oven. Preheat to 425 degrees Fahrenheit (220 degrees Celsius).
-
Slice the dough. If the dough has been frozen, allow it to thaw for a few minutes until it’s easy to slice. Cut the dough into 1/4-inch slices.
-
Arrange on baking sheets. Place the slices about 1/2 inch apart on parchment-lined or greased baking sheets.
-
Bake. Bake for 8 to 10 minutes, or until the edges are very lightly browned.
-
Rotate halfway through baking. For even baking, rotate the cookie sheets from top to bottom and front to back halfway through the baking period.
-
Transfer to wire racks. Use a small, angled metal spatula or pancake turner to transfer the cookies to wire racks to cool.
-
Serve. Enjoy your savory cheese dollars immediately or at room temperature.
