Savory Cheese Dollars Recipe

Description: One of our favorite noshes, you can stash the dough in the freezer and just pull out and bake when the cravings get strong enough.

Instructions:

  1. Soften the butter and cheddar cheese. Allow them to reach room temperature for easier mixing.

  2. Whisk together the dry ingredients. In a small bowl, combine the flour, salt, and both types of pepper. Ensure they are evenly mixed.

  3. Cream the cheese with the butter. In a mixing bowl, beat the cheddar cheese with the softened butter until well combined and creamy.

  4. Incorporate the dry ingredients. Gradually add the flour mixture to the cheese and butter mixture while mixing on low speed. Continue until the dough is well blended.

  5. Chill the dough. Scrape the dough onto a piece of plastic wrap and refrigerate for about 1 hour, or until firm.

  6. Shape the dough. Form the chilled dough into three 1-inch-diameter rolls.

  7. Wrap and store the dough. Individually wrap each roll in plastic wrap, and if freezing, wrap in aluminum foil as well. Refrigerate for up to 3 days or freeze for up to 3 months.

  8. Preheat the oven. Place 3 oven racks in the upper and lower thirds of the oven. Preheat to 425 degrees Fahrenheit (220 degrees Celsius).

  9. Slice the dough. If the dough has been frozen, allow it to thaw for a few minutes until it’s easy to slice. Cut the dough into 1/4-inch slices.

  10. Arrange on baking sheets. Place the slices about 1/2 inch apart on parchment-lined or greased baking sheets.

  11. Bake. Bake for 8 to 10 minutes, or until the edges are very lightly browned.

  12. Rotate halfway through baking. For even baking, rotate the cookie sheets from top to bottom and front to back halfway through the baking period.

  13. Transfer to wire racks. Use a small, angled metal spatula or pancake turner to transfer the cookies to wire racks to cool.

  14. Serve. Enjoy your savory cheese dollars immediately or at room temperature.
