Instructions:
-
In a medium-sized saucepan, add the potatoes and cover them with water. Bring to a boil over medium-high heat.
-
Reduce the heat and let the potatoes simmer until they are tender, which should take approximately 15 minutes.
-
Once the potatoes are cooked, drain them and discard the water. Mash the potatoes thoroughly and set them aside.
-
Preheat your oven to 450°F (230°C).
-
In a mixing bowl, beat the eggs. Add the whipping cream and salt, and whisk until well blended.
-
Add the mashed potatoes to the egg mixture and whisk until everything is well combined.
-
Mix in both grated cheeses and finely chopped onion until evenly distributed throughout the mixture.
-
Sprinkle in the baking powder and stir until fully incorporated.
-
Prepare a 9-inch square oven-proof casserole dish by either spraying it with vegetable oil or rubbing butter inside.
-
Pour the potato mixture into the prepared dish, ensuring it is evenly spread out.
-
Bake the Kartoshnik in the preheated oven for 35 minutes, or until the top develops a beautiful light golden color.
-
Once baked, remove the Kartoshnik from the oven and allow it to cool for 5 minutes before cutting into squares.
-
While the Kartoshnik is cooling, melt the remaining butter in a small saucepan.
-
Cut the Kartoshnik into 3-inch squares.
-
When serving, drizzle each square with melted butter, top with a dollop of sour cream or yogurt, and sprinkle with chopped green onions.
