Sapo Tahu Ayam Jamur Kuah 🍲

Bakso ikan (fish balls) 5, halved into quarters
Tahu udang (shrimp tofu) 1, cut into pieces
Ayam paha (chicken thigh) 1 large (or chicken breast)
Jahe (ginger), crushed 1 thumb-sized piece
Bawang putih (garlic), minced 5 cloves
Bawang bombay (onion), sliced 3/4 of a medium onion
Saori saos tiram (oyster sauce) To taste
Royco (seasoning) To taste
Gula (sugar) Optional
Minyak wijen (sesame oil) 1 tbsp
Larutan maizena (cornstarch mixture) 1 tsp mixed with 50 ml water

Instructions

  1. Prepare the Chicken: Clean the chicken and cut it into pieces according to your preference. Boil the chicken until tender, then remove and set aside.

  2. Vegetable Preparation: Clean and slice all the vegetables to your liking. Halve the fish balls into quarters and cut the tofu into cubes, then fry until golden and set aside.

  3. Sauté Aromatics: In a pan, heat some oil and sauté the minced garlic until fragrant. Add the sliced onion and stir until aromatic.

  4. Cook the Vegetables: Add the carrot slices and fish balls to the pan, stirring briefly before introducing the mushrooms. Once they are slightly softened, add the boiled chicken along with its broth.

  5. Add Greens: Allow the mixture to cook briefly before adding the sawi putih and pakcoy. Stir gently until the greens begin to wilt.

  6. Season the Dish: Incorporate the oyster sauce, Royco seasoning, sugar (if using), and sesame oil. Mix well and let the ingredients simmer together.

  7. Thicken the Broth: If the broth appears too thin, add the cornstarch mixture while stirring to thicken. Allow the dish to come to a boil.

  8. Final Touches: Taste and adjust the seasoning if necessary. Once satisfied, remove from heat and serve the dish hot, garnished as desired.
