Title: Chicken Meatballs (Bakso Ayam)
Ingredients:
- 500 grams chicken meat
- 250 grams tapioca flour
- Water, as needed
- 6 cloves garlic
- Ground pepper, salt, and nutmeg to taste
- Chicken bone broth (optional)
For Serving:
- Noodles
- Spring onions
- Celery
Broth Seasoning:
- 8 cloves garlic
- 5 candlenuts
- Ground pepper, salt, and nutmeg to taste
- Water, approximately 2 liters
- Chicken bones
Instructions:

Prepare the Meatballs:
- Grind the chicken meat and young chicken bones until smooth, either using a meat grinder or a food processor.
- Add tapioca flour and finely ground spices. Season with salt, pepper, and nutmeg to taste.
- Bring a pot of water to a boil. Once boiling, turn off the heat. Shape the chicken mixture into meatballs using a spoon and drop them into the boiling water until cooked through. Remove and drain.

Make the Broth:
- Sauté garlic and candlenuts until fragrant. Set aside.
- In a separate pot, bring water to a boil. Add the sautéed spice mixture and season with salt, pepper, and nutmeg. Adjust seasoning to taste.

- Boil noodles separately and prepare chopped spring onions and celery.
- Serve the chicken meatballs in bowls with noodles, topped with broth, and garnished with chopped spring onions and celery.
