Siomay Ayam: A Savory Indonesian Dumpling Delight

Ingredients:

  • 125 grams chicken breast
  • 125 grams tapioca flour
  • 1 tablespoon all-purpose flour
  • 1/2 medium chayote (labu siam)
  • Salt, to taste
  • Sugar, to taste
  • 1 carrot
  • 1 egg
  • 1 stalk green onion (daun bawang)
  • 3 cloves garlic
  • Chicken or mushroom bouillon powder, to taste

Instructions:

  1. Prepare the Chicken Mixture:

    • Begin by blending the chicken breast with the egg and garlic until you achieve a smooth mixture. This blend will serve as the base for your siomay.
  2. Prepare the Vegetables:

    • Peel, wash, and boil the chayote until tender. Once cooked, either finely grate or mash it to incorporate smoothly into the mixture.
    • Peel and wash the carrot, then grate it finely. Slice the green onion into thin rings.
  3. Mix the Ingredients:

    • In a large bowl, combine the chicken mixture with the grated carrot, sliced green onion, and mashed chayote.
    • Add the tapioca flour and all-purpose flour to the bowl. Mix thoroughly until all ingredients are well combined.
    • Season the mixture with chicken or mushroom bouillon powder, and adjust the seasoning with salt and sugar according to your taste. Note that the mixture should not be too firm; if it is, it may result in dense siomay. The texture should be soft and slightly sticky.
  4. Cook the Siomay:

    • Bring a large pot of water to a boil. Using two spoons, shape the mixture into small dumplings and carefully drop them into the boiling water.
    • Continue to cook until all the siomay are floating and cooked through. This should take a few minutes.
  5. Prepare Additional Accompaniments:

    • While the siomay cooks, prepare additional items like tofu, boiled eggs, cabbage, and potatoes if desired.
  6. Serve:

    • Once the siomay are cooked, remove them from the water and drain. Arrange them on a serving platter along with the tofu, boiled eggs, cabbage, and potatoes.
