Chicken Soup with Chicken Broth (Sup Ayam + Kaldu Ayam)
Ingredients:
- 1/4 fresh chicken, cut into pieces
- Raw vegetable ingredients for soup (such as carrots, potatoes, or any preferred vegetables)
- 5 shallots
- 4 cloves garlic
- 3 candlenuts
- A pinch of coriander
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of galangal
- Ground black pepper to taste
- Salt to taste
- Flavor enhancer (optional)

Prepare the Chicken:
- Cut the fresh chicken into manageable pieces.

Prepare the Spice Paste:
- In a blender or food processor, combine the shallots, garlic, candlenuts, coriander, ginger, and galangal. Blend until you achieve a smooth paste.

Cook the Chicken:
- In a large pot, bring water to a boil. Add the spice paste to the pot.
- Reduce the heat, and add the chicken pieces. Stir well to coat the chicken with the spice paste.
- Cover the pot and simmer until the chicken is tender and the water has reduced. This process is known as “ungkep,” which helps to infuse the chicken with the rich flavors of the spices.

Prepare the Vegetables:
- While the chicken is simmering, wash and cut the raw vegetables into bite-sized pieces. Typical vegetables for this soup include cabbage, carrots, and potatoes.
- In another pot, bring water to a boil. Add the cut vegetables and cook until they are tender but still firm.

Combine and Finish Cooking:
- Once the chicken is tender and the water has reduced, add the cooked vegetables into the pot with the chicken. If the chicken broth is too thick, you can add a bit more water.
- Add the cabbage, tomatoes, celery leaves, and green onions to the pot. Be careful not to discard the chicken broth, as it will continue to enhance the flavor of the soup.

- Season the soup with salt, ground black pepper, and a flavor enhancer if desired. Stir well and let the soup simmer for a few more minutes, allowing the flavors to meld.
