Ingredients
- 6 strips bacon, chopped into small pieces
- 1 whole chicken, cut into serving pieces
- 1/2 cup dry white wine
- 1/2 pound white mushrooms, sliced
- 1/2 cup onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh rosemary, finely chopped
- 2 teaspoons dried rosemary leaves
- 2 cups water
- 2 tablespoons cornstarch

Prepare the Bacon
In a large skillet, cook the bacon over medium-low heat until it becomes crispy and golden. This will take about 10 minutes. Using a slotted spoon, transfer the crispy bacon to a 4 to 6-quart Crockpot, leaving the rendered fat in the skillet. -
Brown the Chicken
Pour off all but two teaspoons of bacon fat from the skillet. Increase the heat to medium-high and add the chicken pieces to the skillet. Brown the chicken on all sides, which will take about 8 minutes. Once browned, transfer the chicken pieces to the Crockpot with the bacon. -
Deglaze the Pan
Pour the dry white wine into the hot skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Allow the wine to reduce and thicken slightly, which will take about 3 minutes. -
Combine Ingredients
Add the reduced wine to the Crockpot along with the sliced mushrooms, chopped onions, minced garlic, fresh rosemary, dried rosemary leaves, and a pinch of salt. Stir everything together to combine. -
Cook the Stew
Cover the Crockpot and cook the stew on low heat for 6 hours or on high heat for 3 hours. The chicken should be tender and the flavors well melded. -
Thicken the Sauce
Once the cooking time is complete, carefully transfer the chicken, bacon, and vegetables to a serving platter and keep warm. Pour the sauce from the Crockpot into a small saucepan. In a separate bowl, mix the water and cornstarch together until smooth, then stir this mixture into the saucepan. Bring the sauce to a boil over medium heat, stirring constantly, until it thickens, which should take about 5 minutes. -
Serve
Pour the thickened sauce over the chicken and garnish with additional fresh rosemary if desired. Serve hot alongside mashed potatoes, noodles, or rice, and enjoy a comforting and delicious meal!
