Makope with Chicken: A Delightful Indonesian Dish

Ingredients:

  • 3 bundles of makope (cut into sections and boiled)
  • 150 grams minced chicken
  • 100 ml hot water

For the Spice Mix:

  • 2 cloves garlic, finely minced
  • 3 curly red chilies, finely minced
  • 5 shallots, finely minced
  • 2 tablespoons sweet soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chicken bouillon powder to taste
  • A pinch of sugar

Instructions:

  1. Prepare the Makope:

    • Begin by bringing a pot of water to a boil with a pinch of salt. Add the makope and cook until slightly wilted. Remove from the water, drain, and arrange on a plate. Set aside.
  2. Cook the Spice Mix:

    • In a pan, heat a little oil over medium heat. Sauté the minced garlic, red chilies, and shallots until they become aromatic and golden brown.
  3. Add the Chicken:

    • Add the minced chicken to the pan. Cook until the chicken changes color and is fully cooked through.
  4. Season the Dish:

    • Incorporate the sweet soy sauce, oyster sauce, sesame oil, salt, pepper, chicken bouillon powder, and sugar. Stir well to combine all the flavors.
  5. Adjust the Consistency:

    • Pour in the hot water gradually, adding enough to achieve your desired sauce consistency. Continue to cook until the liquid reduces and thickens slightly.
  6. Final Adjustments:

    • Taste the sauce and adjust seasoning if necessary. Once done, remove from heat.
  7. Serve:

    • Spoon the chicken mixture over the prepared makope. Serve immediately and enjoy!
