Chicken Wonton Soup with a Savory Broth

Ingredients:

  • 6 tablespoons ground chicken
  • 2 egg whites
  • 1 small carrot, peeled and grated
  • 1 small chayote, peeled and grated
  • 4 cloves garlic
  • 1 teaspoon fried shallots
  • A pinch of ground black pepper (approximately 1/4 teaspoon)
  • 1 teaspoon sesame oil
  • Wonton wrappers, as needed
  • 4 tablespoons tapioca flour

  • For the broth:
    • 4 cloves garlic
    • 2 cups water
    • Salt to taste
    • Sugar to taste
    • Ground black pepper to taste
    • Chopped green onions
    • Chopped celery leaves

Instructions:

  1. Prepare the Chicken Mixture:

    • Place the ground chicken in the refrigerator for about 10 minutes to chill, which helps maintain its freshness when blending.
    • In a blender, combine the chilled ground chicken, garlic, egg whites, black pepper, sugar, and salt. Blend briefly until the mixture is smooth.
  2. Prepare the Vegetables:

    • Peel and grate the chayote and carrot. Mix these grated vegetables into the chicken mixture.
    • Add the tapioca flour to the mixture and adjust the seasoning to taste. The mixture should have a smooth, slightly thickened texture.
  3. Assemble the Wontons:

    • Place a small amount of the filling in the center of each wonton wrapper.
