Grammamaz’s Pot Roast Recipe 🍲

Got tired of the same old pot roast so decided to spice things up a bit. 🌶️ Decided to try parsnips and rutabaga instead of potatoes. Yummy!! Even my husband liked it and he is a fuss pot. The meat will melt in your mouth. 💖

Ingredients:

  • 5 lbs chuck roast
  • 1/4 cup flour
  • 1 tbsp olive oil
  • 1 onion
  • 1 garlic clove
  • 1 celery stalk
  • 2 cups Rotel Tomatoes
  • 1 bay leaf
  • 3 carrots
  • 1 parsnip
  • Salt to taste

Instructions:

Step Description
1 Preheat oven to 350°F (175°C).
2 Flour the chuck roast; do not discard remaining flour.
3 Brown the chuck roast in olive oil in a hot frying pan.
4 Transfer the browned meat to a good-sized baking dish with a cover.
5 Brown onions, garlic, and celery in the same pan in which you browned the meat.
6 Stir in the remaining flour, then transfer to the baking dish.
7 Add Rotel Tomatoes to the frying pan to get all the browned bits, then put into the baking dish.
8 Add the bay leaf.
9 Cover and cook for 2 hours.
10 Remove from oven and add carrots and parsnips.
11 Cook for another 30 minutes.
12 Taste for flavor. Add salt, if necessary.
13 Cook for another 30 minutes.
14 Remove from oven.
15 Put the meat on a platter surrounded by vegetables.
16 Serve gravy separately.
