Papaya and Tuna in Coconut Milk with Chopped Spices

Ingredients

  • 150 grams young papaya, grated (washed with a little salt and drained)
  • Tuna fish (I prefer filleted tuna)
  • 1/2 cup coconut milk (such as Kara brand)
  • Chopped spices:
    • 10 green curly chilies, sliced
    • 3 red curly chilies, sliced
    • 7 shallots, sliced
    • 4 garlic cloves, sliced
    • 2 cm galangal, sliced
  • 1/2 tablespoon oyster sauce
  • Sugar (to taste)
  • Chicken bouillon powder (to taste, such as Royco)
  • 10 slices of palm sugar
  • Water (as needed)
  • Cooking oil (for frying)

Instructions

  1. Prepare the Tuna: Cut the tuna into two pieces and lightly fry them in a pan until just cooked. Remove and set aside.

  2. Sauté the Spices: In the same pan, heat a little cooking oil over medium heat. Add all the chopped spices and sauté until they become slightly wilted.

  3. Add Papaya: Stir in the grated papaya, along with a pinch of salt, granulated sugar, palm sugar, oyster sauce, and chicken bouillon powder. Mix well until all ingredients are combined.

  4. Add Water: Pour in enough water to cover the papaya mixture. Taste and adjust the seasoning as needed. Bring to a boil.

  5. Incorporate Coconut Milk and Tuna: Once boiling, add the coconut milk and the fried tuna pieces. Stir gently to combine, allowing the flavors to meld. Let the mixture simmer until the liquid reduces slightly.

  6. Finish Cooking: When the papaya appears tender and has absorbed the flavors, remove from heat and transfer to a serving dish.
