Kuning Tahu Telur: A Comforting Indonesian Delight

Instructions

  1. Boil the Eggs: Begin by boiling the chicken eggs until they are hard-boiled. Once cooked, remove them from the hot water and let them cool. After cooling, carefully peel off the shells and set aside.

  2. Prepare the Tofu: Cut the firm white tofu diagonally into slices. Rinse the tofu pieces under cold water to remove any residual impurities, then set them aside to drain.

  3. Prepare the Spices: Peel the garlic and shallots, then wash them along with the fresh turmeric. Once clean, blend or grind the garlic, shallots, and turmeric into a smooth paste. For the bay leaves, keep them whole, while the galangal and lemongrass should be bruised to release their flavors.

  4. Sauté the Spices: In a large skillet or saucepan, heat a sufficient amount of cooking oil over medium heat. Add the blended spice mixture to the pan, stirring continuously until it becomes fragrant and slightly golden.

  5. Combine Ingredients: Gently add the boiled eggs and sliced tofu into the skillet, ensuring they are coated with the sautéed spices. Stir carefully to prevent breaking the tofu and eggs.

  6. Add Liquids and Season: Pour in the coconut milk and water, then add sugar and salt to taste. Stir the mixture gently to combine all the ingredients.
