Ingredients

  • 1 lb country-style boneless pork ribs
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 6 slices ginger
  • 3 green onions, chopped
  • 2 cups cooked brown rice
  • 1 cup cooked white rice
  • 1 tbsp vegetable oil
  • 1 can cola (12 oz)
  • Salt and pepper to taste

Instructions

  1. Prepare the Pork: Heat vegetable oil in a large pot over high heat. Add half of the pork ribs and sauté until browned. Remove the browned pork from the pot and set aside. Repeat with the remaining pork ribs.

  2. Braise the Pork: Return all the pork ribs to the pot and turn off the heat. Slowly pour the cola into the pot. Turn the heat back on and bring the mixture to a boil.

  3. Simmer: Reduce the heat to medium-low, cover the pot, and simmer for 30 minutes.

  4. Add Flavor: Add minced garlic, soy sauce, ginger slices, mushrooms (if using), and half of the chopped green onions to the pot. Continue to simmer, covered, until the pork is tender, about 40 minutes.

  5. Thicken the Sauce: Uncover the pot and simmer until the sauce is slightly thickened to your liking.

  6. Season and Serve: Season the stew with salt and pepper according to taste. Transfer the stew to a serving bowl and sprinkle with the remaining chopped green onions.
