Crispy Fried Bawal (Gurih Bawal Goreng)

Ingredients:

  • 1 whole bawal fish (Pomfret)
  • 1 tablespoon coriander seeds
  • 3 cloves garlic
  • 5 shallots
  • 1 piece turmeric (about 1 inch)
  • 1 cm ginger
  • 2 cm galangal
  • 2 stalks lemongrass
  • 1 lime
  • Cooking oil (as needed)
  • Salt (to taste)
  • Flavor enhancer (optional, to taste)

Instructions:

  1. Prepare the Fish: Begin by cleaning the bawal fish thoroughly under running water. Once cleaned, gently squeeze the juice of the lime over the fish to add flavor and help remove any fishy odor.

  2. Make the Marinade: In a blender or mortar and pestle, combine the coriander seeds, garlic, shallots, turmeric, ginger, galangal, and lemongrass. Blend or grind until you achieve a smooth paste. This aromatic mixture will be the essence of your dish.

  3. Marinate the Fish: Rub the blended spices generously over the fish, ensuring that every surface is well coated. Allow the fish to marinate for approximately 5 minutes to let the flavors penetrate deeply into the flesh.

  4. Fry the Fish: In a large frying pan, heat sufficient cooking oil over medium heat. Once the oil is hot, gently place the marinated fish into the pan. Fry until the fish is golden brown and cooked through, turning occasionally to ensure even cooking.

  5. Serve: Once done, remove the fish from the pan and place it on a plate lined with paper towels to absorb any excess oil. Serve hot with steamed rice and a side of your favorite dipping sauce.

Enjoy your deliciously crispy bawal goreng, bursting with rich flavors and aromatic spices that elevate this traditional dish to new heights!
