Instructions:

  1. Prepare the Taro:

    • Peel the taro root and rinse it thoroughly under cold water. Ensure that all dirt and residue are removed.
    • Slice the taro thinly. For convenience, you can use a grater to achieve thin, even slices.
  2. Soak the Taro:

    • Place the sliced taro into a bowl of water mixed with lime powder. This soak should last about 2 hours. The lime powder helps to remove excess moisture and prevent the taro from becoming slimy, which can cause itchiness.
  3. Rinse and Season:

    • After soaking, rinse the taro slices thoroughly under clean water to remove any residual lime powder.
    • In a separate bowl, combine minced garlic with salt and a little water. Strain the mixture to remove the garlic solids, leaving behind the flavored water.
    • Soak the rinsed taro slices in this garlic-salt water for approximately 1 hour. This step infuses the taro with a subtle garlic flavor.
  4. Fry the Taro:

    • Heat a generous amount of oil in a frying pan over medium-high heat. The oil should be hot but not smoking.
    • Fry the taro slices in batches, stirring occasionally to ensure even cooking and to prevent sticking. Fry until the taro chips are golden brown and crispy.
  5. Drain and Season:

    • Remove the fried taro chips from the oil and place them on a paper towel-lined plate to drain excess oil.
    • Once the chips have cooled, transfer them to an airtight container. Sprinkle with grilled beef seasoning and shake well to evenly coat the chips.
