Instructions

  1. In a deep pan, heat 1 1/2 tablespoons of oil over medium heat until shimmering.
  2. Add the chopped onion and sauté until translucent, releasing its natural sweetness.
  3. Lower the flame slightly and incorporate the garam masala powder, frying for just a couple of seconds to enhance its aroma.
  4. Introduce the ground lamb to the pan, cooking until no longer pink and the moisture has evaporated; break any lumps to ensure a uniform texture.
  5. Mix in the ginger-garlic paste, red chili powder, and salt, continuing to fry for an additional minute to meld the flavors.
  6. Stir in the yogurt, allowing it to cook for 2-3 minutes while stirring occasionally for an even mixture.
  7. Add the chopped tomatoes, green chilies, lime juice, and coriander leaves, mixing well to combine.
  8. Cover the pan and let it simmer on low heat for about 15 minutes, until you see oil pooling on the surface of the curry.
  9. While the curry cooks, prepare the pasta according to package instructions, ensuring it’s slightly undercooked.
  10. Once the pasta is ready, gently mix it into the curry, allowing it to cook on the lowest flame for an additional 5-10 minutes, ensuring the dish remains saucy.
  11. Garnish with a few coriander leaves before serving, and pair with yogurt chutney for a refreshing touch.
