Telur Dadar Kuah Kare (Egg Omelette in Curry Sauce)

Indofood curry spice mix 1/2 package
Garlic, sliced 1 clove
Shallots, sliced 2 shallots
Galangal 1 piece (about 1 inch)
Lemongrass 1 stalk
Bay leaf 1 leaf
Mushroom seasoning 1 teaspoon
Water As needed
Cooking oil As needed
Salt To taste

Instructions

  1. Prepare the Omelettes: In a skillet, heat a little oil and cook the two eggs to make omelettes. Once cooked, remove them from the pan and allow to cool before slicing them thinly.

  3. Sauté Aromatics: Using the same skillet, sauté the sliced garlic, shallots, and the Indofood curry mix until fragrant. Add the galangal, bay leaf, and lemongrass, cooking until aromatic.

  4. Combine Ingredients: Transfer the sautéed mixture into the pot of boiling water. Stir well, then add the frozen mixed vegetables, sliced smoked beef, and the thinly sliced omelettes. Let it cook until it returns to a boil.

  5. Season: Add the mushroom seasoning, salt, and sugar, stirring to combine. Taste and adjust the seasoning as needed.

  6. Serve: Enjoy the Telur Dadar Kuah Kare hot, served alongside steamed white rice or vermicelli noodles for a complete meal.
