| Bay Leaves | 3 leaves |
| Lemongrass (crushed) | 1 stalk |
| Lime | 1 piece |
| Kaffir Lime Leaves | 2 leaves |
| Sugar | To taste |
| Salt | To taste |
| Shallots (sliced) | 3 cloves |
| Onion (sliced) | 1/2 piece |
| Spice Paste: | |
| Shallots | 7 cloves |
| Garlic | 4 cloves |
| Tomatoes | 2 pieces |
| Candlenuts | 3 nuts |
| Ginger | 4 cm |
| Red Chilies | 7 pieces |
| Bird’s Eye Chilies (optional) | 3 pieces |

Prepare the Fish: Clean the fresh skipjack tuna and rub it with lime juice. Let it sit for a while, then rinse thoroughly.

Season and Fry: After rinsing, season the fish with salt and mix well. Fry until golden brown, then remove and set aside.
