Fresh Tongkol Pindang

- 700 grams of tongkol fish (or any other fish like mackerel, if preferred)
- 4 shallots, sliced
- 2 garlic cloves, crushed
- Tamarind (asam kandis), crushed
- Turmeric
- Ginger
- Galangal

- Salt, to taste
- Royco seasoning, to taste
- A pinch of sugar (optional, as a substitute for MSG)
Instructions:
-
Prepare the Fish:
- Clean the fish thoroughly. Rub it with salt and lime juice to remove any fishy smell. Set aside.
-
Cook the Spices:
- In a pot, add the sliced shallots, crushed garlic, tamarind, turmeric, ginger, galangal, and lemongrass.
- Pour in enough water to cover the ingredients and bring it to a boil.
- Add salt and Royco seasoning to taste. For a less salty option, you can substitute a pinch of sugar for MSG.
-
Simmer the Fish:
- Once the spice mixture comes to a boil, add the prepared fish.
- Let it simmer until the fish is cooked through and tender.
-
Finish and Serve:
- Adjust seasoning as needed and serve hot.
Note: Feel free to substitute the tongkol fish with other types of fish, such as mackerel, if desired. Enjoy your meal!
