Fresh Tongkol Pindang

Ingredients:

  • 700 grams of tongkol fish (or any other fish like mackerel, if preferred)
  • 4 shallots, sliced
  • 2 garlic cloves, crushed
  • Tamarind (asam kandis), crushed
  • Turmeric
  • Ginger
  • Galangal
  • Lemongrass
  • 5 bird’s eye chilies, sliced (adjust to taste)
  • Salt, to taste
  • Royco seasoning, to taste
  • A pinch of sugar (optional, as a substitute for MSG)

Instructions:

  1. Prepare the Fish:

    • Clean the fish thoroughly. Rub it with salt and lime juice to remove any fishy smell. Set aside.
  2. Cook the Spices:

    • In a pot, add the sliced shallots, crushed garlic, tamarind, turmeric, ginger, galangal, and lemongrass.
    • Pour in enough water to cover the ingredients and bring it to a boil.
    • Add salt and Royco seasoning to taste. For a less salty option, you can substitute a pinch of sugar for MSG.
  3. Simmer the Fish:

    • Once the spice mixture comes to a boil, add the prepared fish.
    • Let it simmer until the fish is cooked through and tender.
  4. Finish and Serve:

    • Adjust seasoning as needed and serve hot.

Note: Feel free to substitute the tongkol fish with other types of fish, such as mackerel, if desired. Enjoy your meal!
